PUMPKIN PONCHE DE CRÈME

Ingredients

  • ¾ lb pumpkin
  • 2 tins condensed milk
  • 4 tins evaporated milk
  • 1 tbsp mixed essence
  • 1 tbsp bitters
  • 1 – 2 cups rum
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cinnamon

Directions

  1. Peel, wash and cut the pumpkin into large chunks. Cook in boiling water until soft.
  2. Mash the pumpkin in a bowl or puree in a food processor.
  3. Add the remaining ingredients and beat with an electric mixer until well blended.
  4. Strain the mixture and place in sterilized bottles. Keep refrigerated.
