Coconut Fudge


  • 1 dry coconut
  • 1½ cups water
  • 1 tin condensed milk
  • 1 cup sugar
  • ½ tsp almond essence
  • 1 oz butter


  1. Grate coconut, add water and squeeze through a strainer to extract all the coconut juice.

  2. In a heavy duty pot, mix all ingredients except butter. Cook over a medium heat stirring constantly. Mixture will thicken and leave the side of the pan.

  3. Remove from heat and beat with a wooden spoon until the mixture thickens and loses gloss.

  4. Pour into a greased dish. Using a knife cut the fudge into squares. Leave to cool and store in an airtight container.
