- 3 large dasheen, peeled, washed and cut into chunks
- 4 oz butter
- 3/4 cup milk
- 2 tbsp fresh green seasoning
- 2 cloves garlic, grated
- 1 cup grated cheddar cheese
- 1 tbsp all purpose seasoning
- ½ tsp salt
- ½ tsp black pepper
- 1 small onion, diced
- 1 small sweet pepper, diced
Place the dasheen in a large pot, cover with water and bring to a boil. Cook until dasheen is soft but not overcooked. Skim off any excess froth while dasheen is cooking. Drain well in a colander and quickly rinse to remove any excess starch.
While the dasheen is cooking, saute the sweet pepper and onion in a little oil or butter until tender.
Return the dasheen to the large pot and add the milk and butter. Mash the dasheen with a fork or potato masher.You may need to add a little more milk.
During this process add the cheese, sweet peppers and onion, green seasoning, all purpose seasoning, salt and black pepper, ensuring all ingredients are well incorporated. The mixture will still be a little chunky. Taste and adjust seasoning if necessary.
Preheat oven to 400 degrees F. Spray a baking dish with cooking spray.
Add the dasheen mixture to the dish, spreading evenly in the dish. Sprinkle the grated cheese on top and place in preheated oven. Bake for 30 – 35 minutes or until the top is golden brown.
Remove and let rest for 5 minutes before cutting and serving.
